Some of you may have noticed I just haven’t had the number(or quality) of posts I felt that I once had. Honestly for the last year I have felt like I have had the worst kind of ADD.
As a matter of fact… I have had it longer than that. Based on my college transcripts and student loan tallies, I have had it for several years… That, in combination with some serious GI issues, as well as a persistent nasal congestion that seriously mimics seasonal allergies(going on 3 years straight) has left me searching for answers.
I have had more tests than I care to admit–for a 25 year old man, I have been probed in more ways than I feel comfortable admitting…
My last doctor(one of many, many) suggested Celiac Disease. This was hard to wrap my little medic brain around. I love cooking. I love it. I’ve talked about cooking here, and my fears with Celiac Disease. I was tested and my antibody test came back negative. I had tests done after for Gallbladder function, as well as a few more proby ewwy things.
In the end, I can’t find anything that matches my symptoms as well as celiac disease. I hate that this is the case, but just off of this page, I match 10 symptoms.
Now, don’t get me wrong. Having worked for a short while in EMS I know that often times it is the compounding of medical conditions that causes such difficulty in diagnosing and treating conditions accurately.
In fact it is sometimes impossible to make someone symptom free, as treating one symptom can compound another and so on and so on.
But I’m going to give it a try. I am going to go Gluten Free on January 1. This is going to be a huuuuuge challenge. No more wheat. No more Beer–NO MORE BEER!?!?!?
You can’t believe how much crap we eat has gluten in it(pretty much everything–but Coke and Dew are gluten free!)
Anyway… I know that some of my readers(or their families) are gluten free and I am looking for suggestions for good Gluten free cookbooks. I know that there is a book out there that tells me what foods from restaurants are gluten free (like fast food) but now I can’t find it.
Any help would be much appreciated.
Hopefully this will result in my being just a little more clear headed…. Hopefully.
